How Firm is Your Foundation?; Journaling; No–Churn Raspberry Swirl Gelato

Journaling is a great way to help you process events both current and past. Simply writing down your thoughts on paper can help you finish processing and healing from stressful events. When you use physical pen/pencil, paper, and write it out you use multiple parts of your brain. You are writing, reading, and may be even speaking out loud. Don’t worry about proof-reading; just let the words flow. You don’t even need to keep what you wrote; it can be extremely cathartic to burn what you just got out of your mind/emotions. You may need to do this multiple times to get maximum benefits. My coach, Dr. Kevin, has his clients do 21 days of journaling and then burning them after writing. I thought I was done after 5 days but kept going only to realize, he was right!

How Firm is Your Foundation?
You may have heard that chiropractors work on backs and necks. While this is true, we are not limited to just backs and necks. Any competent builder will tell you that a firm, level foundation is the top priority when constructing a building or other structure. If the foundation is not firm and level, nothing else that is built above it will be straight. Look at the Pisa Tower in Italy. The ground that the tower was built on was soft on one side and began to settle as it was being constructed. The builders tried to compensate for the lean by constructing the remaining floors at an angle. Just like the Pisa Tower, you have a physical foundation.
Your feet are part of your physical foundation. If feet are unstable, nothing else that is above will be straight. Chiropractors have a big word to describe this: Subluxation—an abnormal position or movement of a joint which disturbs communication within the nervous system causing abnormal function in the body. A subluxation in the foot can change the way you walk and lead to pain in your foot and even problems further up your spine, such as low back pain…even headaches.
The pelvis is also part of your physical foundation. So is your nutritional health. If you have enough pillars unstable in your physical foundation, the entire structure (your body) is unstable. To have a strong physical foundation, you must maintain those areas. We can do this through chiropractic, designed clinical nutrition, massage, acupuncture, homeopathy, exercise, stretching, etc.
We also have to have a mental foundation. Don’t neglect this part. If the mind is off, it will throw off other parts of your foundation. Making sure we have good coping mechanisms, such as down time, counseling, journaling, etc.
Even more important than your physical and mental foundation is your Spiritual foundation. Just like with your feet and with the Pisa Tower, if you don’t have a firm foundation for your life, nothing else that you build upon that life will be stable. When Jesus talks about building on a rock verses on sand, He is not simply talking about a house but a spiritual foundation for our souls. That foundation is Jesus Christ.

Recipe of the Month:
No–Churn Raspberry Swirl Gelato
Ingredients
Raspberry Swirl
1 Cup Fresh Raspberries
1 Tbs Honey
½ Tbs Lemon Juice
½ Tsp Gelatin
Ice Cream Base
1 ½ Cups Cashews, soaked overnight or in warm water 1 hour, then strained
1 ½ Cups Almond Milk or Full-Fat Coconut Milk
½ Cup Honey
1 Tsp Vanilla Extract
1 Tbs Tapioca Flour
Directions
Raspberry Swirl:
1. Heat Raspberries, honey, lemon juice, and gelatin in small saucepan on low.
2. Slowly cook mixture and bring to gentle simmer.
3. Once mixture has slightly thickened, transfer to fridge to cool.
Ice Cream Base:
1. In high-speed blender, add strained cashews, almond milk or coconut milk, honey, vanilla, and tapioca flour and blend until silky smooth.
2. Pour ice cream base into loaf pan.
Assembling Gelato:
1. Drizzle Raspberry mixture over ice cream base using a swirling motion.
2. Using knife or fork, gently swirl raspberry into ice cream base.
3. Carefully lay plastic wrap over swirled ice cream base and freeze 4-6 hours.
4. Remove from freezer and use ice cream scoop to serve.
