Time for a Bigger Pot; Cauliflower Tater Tots
Health Tip:
Did you know that by the time you have a symptom, your body has had a problem for quite a while? Symptoms are the last thing to show up and the first thing to go away. You are not necessarily healthy if you have no symptoms (just consider cancer or high blood pressure which often have no symptoms until advanced stages). Once you address a symptom and it goes away that is when the REAL healing begins! Whatever you did to get healthy to the point of no symptoms needs to CONTINUE so that you can really heal! Sometimes that means 3 months, other times it means years; more damage means more healing must occur.

Time for a Bigger Pot
I’ll be the first to admit that I am no expert when it comes to plants. In my old practice we had four plants in the office, which by the grace of God, I did not kill! I had a patient one week tell me that one of the plants was root bound and would thrive if it was given a bigger pot.
The plant originally came in a small black non-descript pot and, to dress it up, I placed it in a little bit larger pot without repotting it. It served its purpose by blending in with the décor of the office and being a quick easy fix.
Based on that patient’s recommendation, I purchased a larger pot and some potting soil and went to giving the plant more room to grow. I jokingly placed the plant, still in that small black non-descript pot, into the larger pot and proclaimed I was done. It was humorous and we got a kick out of it, but we knew for the plant to live and thrive the plant needed that larger pot. Then I realized that this was a great illustration of what people do in their own lives.
Too often, when it comes to health (and many other important matters), we simply put the plant with the same small pot into a larger one and proclaim the problem solved. This is simply dressing up the problem and covering up the symptom. In the case of my plant, it is obvious that doing that is plain ridiculous. Have you ever stopped to think it is more ridiculous to treat your body that way?
As just one example, let’s look at heartburn: a nasty symptom that interrupts daily life and can even make a person dread eating...or not eating…or both! In an effort to cool the burn, people often turn to acid suppressors. This unfortunately does not fix the underlying problem. This is the same as taking the small black non-descript pot that has the root bound plant in it and placing it in a larger pot. It looks prettier; the burn is no longer there but the problems remain.
In the case of the plant, the roots will continue to be bound up, the plant will starve for nutrients and, as one site put it, “suffocate itself.” In other words, if a root bound plant is not repotted, it will eventually die. Human beings are the same way. If a problem is simply covered up, the body will continue to starve for the nutrients it needs and will be suppressed (suffocated) and the body will continue breaking down.
So, the moral of the story is: Don’t simply cover your problem up. Get to the root of the issue and fix it so that you too may thrive! (Pun definitely intended!)
Recipe of the Month:
I shared this recipe a long time ago and when I went to check the site again, she had changed it some. The original recipe below is cheese free but the updated one has cheese and also more spice ideas. Both variations should be a great way to get more veggies in and can be dairy free and low carb for those that need that in a recipe. Make special note of the eggs, you may need only 2-3 eggs if you are using large eggs as the author used the smallest sized eggs in her recipe.
Cauliflower Tots
3 ½ cup of grated raw cauliflower/broccoli –writer used 430 g raw cauliflower, florets + 180 g raw broccoli florets
1 small brown onion, peeled, diced
4 eggs, size 6 (smallest) (or 4 chia eggs if vegan)
1 tablespoon dried herbs – writer used a mix of mint and basil
1 ½ cup (200g) Gluten Free Oat Flour or Almond Flour if paleo
Salt and pepper – adjust regarding taste
Instructions
Preheat oven to 200 C. (392 F)
Prepare a baking tray covered with baking paper. Set aside.
In a food processor with the S blade attachment, blend on high speed the cauliflower florets, broccoli florets and peeled brown onion until it forms a raw fine vegetable crumb - looks like cauliflower rice. You should obtain 3 cup and ½ cup of packed 'vegetable crumb'.
Add eggs, oat (or almond) flour, herbs, salt and pepper.
Process again on low speed until combine.
Transfer into a bowl and using a spatula combine again until it forms a consistent vegetable paste. If too moist add a bit more oat/almond flour until it forms a paste that you can easily hold in your hand to form nuggets, Add extra oat/almond flour 1 tablespoon at a time if needed.
Oil your hands with olive oil and using your hands form small vegetables nuggets (or balls or any small shapes you enjoy to make and are fun to eat). If you like you can coat some of them with extra oat flour by rolling them in oat flour into a plate.
Place the vegetables nuggets onto a baking tray covered with baking sheet.
Bake for 25 -35 minutes at 200 c until crispy and golden/brown outside but still moist in the center.
Serve hot with dip of your choice or as a side dish with meat or fish. It is also very tasty to eat them at room temperature and they make a lovely addition to your kids lunch box.
You can also freeze the batter before baking and defrost the day before using.
This recipe makes about 30 nuggets.
